~ My Tried and True Recipes ~
I have many recipes to share with you but finding time to get them on here is challenging. I will be implementing them soon so stay in touch. Many of you don't realize I started out a Cook for a Restaurant at a young age. I kept up this line of work for years. So I think between that and my Mothers fine cooking, I got to be a very good cook. My daughters are the same, but more Southern Cooking as my Mom was. I would love to eat that way but as I age I have to curb that into healthy cooking.  Not quite as much fun but being healthy and fit is a high goal for me. I want to maintain a active lifestyle and feel good about myself more than my love for Chicken Fried Steak and Mashed potatoes, and Rolled Dumplings. Once in awhile it is fun to splurge though!!




BEST DILL SALMON...EVER!
So you say you want to try to eat healthier and not sure about fish? I have one that will change your mind however not sure how healthy it is.  Sure is one of my favorites. Mix
1/2 cup Mayonnaise
1/2 cup softened Butter
1-2 cloves Garlic
1 Teaspoon Dill

Bake the fish at 350 until desired doneness, about 25 minutes for me, I like my fish done well. Then spread on the above mixture and bake until brown and bubbly. It is the BEST. If you never liked fish you will love it!  What doesn't taste good with Mayonnaise and Butter??  ;)

~Zucchini Veggie Pizza~

Yes!  It is actually so good and healthy!!

Ok this is a very easy one. I love Pizza but want to have a very fit life from here on out so I wanted a way to come up with something yummy. I had eaten for many years another Pizza Recipe I will also share that used Olive Oil and Spinach (yes it tastes great) and so I just took it one step further. 

Pizza Crust Or Pita Bread - Brush with Olive Oil, then add very thinly sliced Zucchini. I do about 4-5 layers and top the last one with more live oil and garlic salt and pepper. Then add some grated Mozzarella, and this one above I threw on some yellow Pear Tomatoes I had. Bake it at 350 until golden brown and bubbly and eat. It is delicious!!

Truckee Pizza 
I call it this because this used to be served at my favorite Restaurant in Truckee. When I had my home in Tahoe I used to eat at this restaurant all the time. It was my favorite in the whole town. Best food ever. Thus the name try it is is really great and again healthier than regular pizza.

~Vegetable Lasana~




As I get older and want more to stay in shape and work less, I have adapted more of a vegetarian diet. I still eat meat don't get me wrong but I strive to be healthy After losing my sister to Breast Cancer at too young of age, I became very aware of health and lifestyle. I pretty much gave up drinking and became a "Fitness Girl". I used to teach long ago at "Kangaroo Kourts" in Roseville and have long become one of my overweight participants. So my goal became clear what I needed to do and this year I am happy to say I am almost to my goal. I am 10 lbs away from my ideal weight and my Physical showed I am in excellent health.  I am so happy and work hard daily to maintain and improve. I love vegetables now and finding more and more ways to incorporate them into my diet with the things I loved, but healthier.

Leslie's Turkey Enchiladas  
Pretty normal I believe the only secret is I mix a can of Cream of Mushroom Soup with a Can of Red Enchilada Sauce.  It tones it down and makes it much tastier. Try it you will be amazed!
